Oat Berry Pancakes
Ingredients
2 cups oat flour
1 1/4 cup plant-based milk
1 tsp cinnamon
1 tsp vanilla
2 tbsp maple syrup
1 tbsp baking powder
1 tsp coconut oil
1/4 cup fresh or frozen berries
Directions
In a medium sized bowl, whisk together the coconut oil, plant-based milk, vanilla, maple syrup
Once mixed, add the dry ingredients (flour, baking powder, cinnamon) and whisk until smooth
Spray pan with non-stick spray and use a 1/4 cup to scoop the batter and place on pan
Cook on medium heat for appx 1-2 minutes on each side or until bubbles form
Serve with toppings of your choice! I usually like to add chocolate, coconut, fresh fruit, and lots of maple syrup of course. ENJOY!
