Oat Berry Pancakes

Ingredients 

  • 2 cups oat flour

  • 1 1/4 cup plant-based milk

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 2 tbsp maple syrup

  • 1 tbsp baking powder

  • 1 tsp coconut oil

  • 1/4 cup fresh or frozen berries

Directions

  • In a medium sized bowl, whisk together the coconut oil, plant-based milk, vanilla, maple syrup

  • Once mixed, add the dry ingredients (flour, baking powder, cinnamon) and whisk until smooth

  • Spray pan with non-stick spray and use a 1/4 cup to scoop the batter and place on pan

  • Cook on medium heat for appx 1-2 minutes on each side or until bubbles form

  • Serve with toppings of your choice! I usually like to add chocolate, coconut, fresh fruit, and lots of maple syrup of course. ENJOY!
